Holiday Favorite: Pumpkin White Morsel Cake

The Holiday season is definitely upon us. I love to bake and my family loves to eat. Who doesn’t love to eat right?

Food Lion invited me to share my favorite holiday favorite recipe with you in conjunction with their Food Lion Bake-Off contest.

I have cooked this every year since I started my Weight Watchers Journey.

Pumpkin White Morsel Cake

Ingredients:

1 Box Spice Cake Mix

1 Bag of White Chocolate Morsels

1 14.5 oz can of Pumpkin

3 Teaspoons of water

Directions:

Mix Spice Cake Mix, Pumpkin and water together. Then add the morsels. Stir well. Bake at 350 degrees for 30 to 35 minutes.

The recipe is so easy yet so delicious. I receive so many comments on the taste and my two smallest fans, M and L, request this cake be put in their lunch box.

Easy and Delicious Mini Pumpkin Pies

It is that time of year. Time to get out the pie shells and create delicious pie desserts. Today, the first day of the month, I spent all day helping in L’s classroom. We had stations set-up for their Pumpkin Day and I was assigned to the Pumpkin Pie station. The delicious scent from the pies baking all day was just filling my heart with joy. These were the cutest little pumpkin pies and delicious as well. I would eat the filling and not the crust since it isn’t gluten free, but you could make them gluten free. The kids were all enjoying the pies. I just had to share the recipe here with you.

Mini Pumpkin Pies

Ingredients

1/4 cup sugar
2 tbsp egg beaters
1/4 cup pumpkin
1 heaping tsp. flour
1/4 tsp pumpkin pie spice
1 tbsp canned evaporated milk
15 fillo shells

Mix all ingredients together and stir. Pour mixture into shells. Bake at 375 degrees for 15 minutes.

This would be perfect for an appetizer at a holiday meal or just to bake on a cold snowy day. Enjoy!

You have to try this summer spaghetti salad!

Remember when I shared the lemonade pie recipe last week? I said that I absolutely love Summer because of all the fun and creative cooking you can do.

You are going to fall in love with this summer spaghetti salad. I get raving comments everywhere I take this dish. Ten years ago, a former co-worker of mine brought in this recipe to a work party and I fell head over heels in love immediately. It is such a simple salad to make but one that will become your all-time favorite salad.

Summer Spaghetti Salad

Ingredients:

1 box of spaghetti noodles
1 pepper
3 large cucumbers
2 tomatoes
1 package of Zesty Italian Dressing Mix
1 bottle of Fat-Free Italian Dressing

Directions:

1. Boil your spaghetti noodles.

2. Cut up all your vegetables into small cubes.

3. Mix the vegetables in an bowl with the Zesty Italian Dressing Mix.

4. As soon as the noodles are finished boiling, use a drainer to separate the noodles from the boiling water. Run cold water over the noodles. Drain.

5. Mix the noodles and vegetables in a large bowl.

6. Pour the bottle of Italian Dressing all over the noodles. Mix well.

7. Refrigerate.

Enjoy. You will be coming back for seconds and your guests will be screaming for more. This is by far M’s and my favorite summer salad.

Guess what? It is healthy for you too!

Delicious Summer Treat – Homemade Lemonade Pie

Are you a lemon pie fan? I have a treat for you. Summer brings out the best in me with baking delicious treats. I started making this recipe about three summers ago and everyone just raves about how delicious it is!

I cooked two pies this past weekend for a family birthday party and thought, I should share it with you all so you can enjoy an awesome summer pie.

This recipe will make two – 8 inch pies.

Ingredients

1 (6 ounce) can frozen yellow or pink lemonade concentrate, thawed
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed
2 (8 inch) prepared graham cracker crusts

Directions

1. Mix together sweetened condensed milk and lemonade concentrate in a bowl.

2. Fold in whipped topping.

3. Pour into pie crusts.

4. Place in freezer for at least 2 hours. (You can leave it in freezer overnight to eat the next day.)

Easy German Chocolate Moist Cake

My mom requested a cake without icing for her birthday last week. She loves german chocolate, so I thought I would whip up an easy recipe to surprise her. Since school, work, and all the extracurricular activities were all taking up my extra time, I went with a boxed cake mix. Please do not hate until you have tried this recipe. It has a special step that leaves the cake so moist.

Ingredients

1 box of German chocolate cake mix
1 15 oz. container of coconut pecan frosting
1 cup of water
1/3 cup of olive oil
3 eggs

Directions

1. Preheat oven to 350 degrees F. Spray cooking spray (Pam) on your baking dish. I used a circular cake pan.

2. In a big mixing bowl – mix the cake mix, frosting, water, olive oil and eggs really well until smooth.

3. Pour the batter into the baking dish.

4. Bake for 50 minutes or until done. Ovens can vary. I test by inserting a toothpick in the middle of the cake to ensure it comes out clean. Wait till cake is cooled before you cut.

5. Enjoy a delicious moist cake.
