Weight Watchers Chicken Cups – So Delicious!

As many know me, I am queen of quick, easy and healthy meals. Thanks to my great friend Cindy over at Cin’s Out Numbered and Loving it, Chicken Cups makes a regular stop on our dinner table. I actually posted a picture on Facebook tonight and many commented requesting the recipe. I thought I had shared this recipe here with my readers, but after researching old posts, there was no trace of the recipe here. I am so sorry for holding out on you. Believe me, you are so going to enjoy this recipe and the entire family will as well.

Ingredients:

1 can Buttermilk Biscuits (10 biscuits)
1 cooked chicken breast, cut into small pieces
1 can Healthy Request Cream of Chicken Soup or Cream of Mushroom Soup (we prefer the mushroom soup)
2/3 c. Fat Free Shredded Cheddar Cheese

Preheat oven to 400 degrees.

Directions:

1. Mix all the ingredients in a bowl.

2. Place each biscuit into a muffin pan.

3. Press the biscuits into the muffin pan holes to form cups.

4. Spoon mixture evenly into cups.

Bake for 12-15 minutes or until golden brown.

From my notes, 2 chicken cups = 5 points. 3 chicken cups = 7 points. Enjoy!

The easiest potato soup EVER!

It is that time of year when the weather outside is getting frightful. This means it is time to heat up the inside with a big ole delicious bowl of soup. Potato soup to be more exact. I was searching online for a really good potato soup and since I am queen of easy meals here in this busy household, I wanted something quick. After doing some searching, I kept seeing weight watchers friendly potato soup recipes all over. Most used refrigerated potatoes though, and I like using my own potatoes. So without further ado, enjoy an easy and healthy recipe of Potato Soup!

Weight Watcher Friendly Potato Soup

Ingredients:

5-pound bag of potatoes

3-cans of Swanson all natural Chicken Broth

2-pouches of Pioneer Gravy Sausage Mix

Directions:

1. Peel and cut the potatoes

2. Boil the potatoes in water until the potatoes are soft

3. Drain the potatoes

4. Pour one can of the chicken broth over the potatoes

5. Mix the other two cans of chicken broth with the two pouches of gravy mix

6. Pour the mix over the potatoes, stir really well and let simmer

7. Enjoy a delicious bowl of soup

Delicious Pumpkin Shake Recipe – 4 Points Weight Watchers

Pumpkin is always on my mind here lately. My step-daughter and I were chatting last night that a Pumpkin Shake would be so delicious right now. You never can usually find a low-fat version though, so I told her I would come up with my own recipe.

After dinner tonight, I dived right into concocting a recipe for a weight watchers friendly shake. Here are the ingredients I used:

1/2 cup fat free Breyers Vanilla ice cream
3 tsp. of canned pumpkin
1/2 cup of skim milk
Nutmeg
Cinnamon
Fat Free Whip Cream

I mixed the first five ingredients together in a blender. Pour into a cup. Top with fat free whip cream along with a sprinkle of cinnamon on top.

RESULT:

4 point Weight Watcher Pumpkin Shake (so delicious)!

Fried Apple Pie Weight Watchers Style

Apple season is amongst us here in the beautiful NC mountains. The aroma, the taste, and the ever ending apple creations just thrills me beyond delight. Our family has an addiction to the mouth-watering fried apple pies in Pigeon Forge at the best ever Apple Barn known to man, but only one thing that stops us from eating them everyday. Our hips attract the calories and fat the minute the pie hits our stomach’s.

I grab the laptop, went to the information hound google, and searched for a more calorie-friendly fried apple pie. I found this one on Cooks.com. I did some adjustments and came up with a very delicious fried apple pie. Does it match Apple Barn’s recipe? Not even close, but it is very delightful and my hips will not show how much I LOVE apple pie!

M helped me pick out the apples and wash them really good. We added them to our boiling pot. Cooked them on medium heat.

Next, we added lemon juice.

Dry ingredients were added.

Fill the pita bread with apple mixture. Spray the skillet with pam, place the apple pie in the skillet.

Spray the I Can’t Believe It’s Butter all over the pie and ENJOY – Only 4 Pts!

RECIPE (Adapted from Cooks.com)

1 pkg. pita bread (6, 2 oz. each)
8 large apples, peeled & sliced
1 tbsp. lemon juice
4 tbsp. cornstarch
3 tsp. cinnamon
1/2 tsp. nutmeg
10 pkg. Equal
Spray Butter

Cook apples in lemon juice. Add remaining ingredients. Fill each slice of pita bread with 1/2 of mixture. Fold over. Brown in skillet sprayed with Pam. Makes 6.

Weight Watchers Pineapple Angel Food Cake

Holidays are all throughout the year and that means large family gatherings here at One Moms World. This could mean unfortunately, that you will stuff yourself so bad that you cannot even get out of your own chair. It does not have to be this way, believe me. I have learned that when invited to huge family gatherings, to take food that you know is healthy, so you will know, you will at least have a couple of choices to pick from.

For our big Easter celebration this past weekend, I found a recipe in the paper called Angel Lush with Pineapple. I made a few changes to it so it would be more Weight Watchers friendly and here was the end result.

Weight Watchers Points Plus = 4 Points

Ingredients:

1 fresh pineapple peeled and crushed
1 pkg. (3.4 oz.) JELL-O Sugar Free Vanilla Flavor Instant Pudding
1 cup thawed Fat Free COOL WHIP Whipped Topping
1 pkg. (10 oz.) round angel food cake, cut into 3 layers
10 small fresh strawberries

Directions:

1. Mix together in bowl pineapple and dry pudding mix. Stir in cool whip.
2. Stack first angel food cake layer, spread pudding mixture over first layer. Stack the second layer, and then spread pudding mix over layer and do the same with last layer.
3. Refrigerate for 1 hour. Add strawberries over top layer.

Weight Watchers Quick Lunch Banana and Peanut Butter Sandwich

Growing up in the south, a banana and peanut butter sandwich was the go-to lunch when I was a kid. Just because I am an adult now, doesn’t mean that I cannot still love my specialty sandwiches. The only thing is that peanut butter can use up some beloved points but not anymore. A friend suggested the Better’ N Peanut Butter. It is only 2 points per 2 tablespoons. I am usually going through a jar once a week, it is that good. I do the low sodium.

I decided a couple of weeks to start making my banana and peanut butter sandwiches again. I use the white wheat bread that is now 3 points for two slices on the new points plus program.

This delicious sandwich is only 5 points and it will leave you full. Pair it with some celery or an apple and you have a quick lunch.

Weight Watchers Creamy Alfredo Pasta Dish

Creamy Alfredo has always been a huge hit in the household, but unfortunately, it comes with a price as it has a lot of fat and calories. The times have changed though thanks to Classico. I was in the grocery store last week trying to decide on a sauce that would be weight watchers friendly and did not have tomatoes. Not a lot of choices until my eyes met this jar:

I am pretty sure that I squealed right there in the grocery store aisle. This sauce is only 1 point on the new Weight Watchers Points Plus program. Oh happy day. I went and grabbed 99% fat free ground turkey and used a box of whole wheat pasta at home and came up with a 5 points nice dinner entree.

This dish was an instant hit, as there were no leftovers at all.

Directions:

1. Cook the box of noodles as stated on the box.

2. Brown the ground turkey.

3. Drain the noodles when done.

4. Add the ground turkey and 2 jars of Classico Light Alfredo Sauce with the noodles.

5. Mix thoroughly.

Dinner is served.

Disclosure: Classico had nothing to do with this post. I just found the new light version on the grocery shelf last week and wanted to try it. It was a huge hit so now I am sharing this easy dinner entree!

Stress Can Add Weight

Unfortunately, when there is stress in your life and you don’t make the best food choices then that food can add the numbers to your waistline unfortunately. After going through an awesome weight loss journey, my world was turned upside town when my beloved grandmother passed away. That was my best friend. I miss her so much and just would eat this, or that and then the weight began to creep back on. Not a lot of it came back, but 15 pounds did over the course of the last year. I got to thinking, Grandma disliked so much when I was fat, I need to suck it up and make her proud of me.

So, this year, I have been doing just that. I am back to religiously counting my weight watcher points. I have cut out a lot of sugar and soft drinks. Even cut back on the amount of coffee I was drinking. Water is my choice of drink these days.

I am back on track and getting very close to where I was with my weight loss journey. Here is where I left off:

I am not quite there yet, but it is a huge step in the right direction. I am just thankful that I realized what was happening and made the change before it is too late. Diets do not work, it is the lifestyle change that works. Walking is definitely what helps as well as also Just Dance on the Wii – just saying!

I am going to add more recipes here as well that I have been cooking up over the last few weeks that are low in points. I will do a weekly update with my weight loss and tips that are helping me along the way. Summer will be here before we know it and we all know what that means – Bathing Suit time!

Healthy Lasagna Recipe

Italian night does not always have to be so high in fat to taste delicious. I have cooked this lasagna for years and there are never no leftovers left every time I serve it for dinner. As you all know, I am queen of easy recipes since my days are pretty full. So, this recipe is no different. Enjoy an Italian night and still keep your figure. Win-Win for everyone right?

I thought I would video myself the other night when I was making so dinner so you all can see how easy this recipe is!

Now does that not look so delicious?

Recipe

Ingredients

1 Box of Whole Wheat Lasagna
1 Sweet Onion (chopped)
1 Green Bell Pepper (chopped)
1 TSP. Garlic in Extra Olive Oil
1 LB Ground Turkey
1 Jar of Spaghetti Sauce
2 Cups of Low Fat Shredded Mozzarella Cheese

Directions

1. Boil lasagna noodles.

2. Saute the onions and peppers with a teaspoon of low fat butter and a teaspoon of garlic in extra olive oil.

3. Brown the ground turkey with the veggies.

4. Add the spaghetti sauce. Bring to a boil.

5. Layer 13 x 9 casserole dish with noodles, then sauce mixture, then shredded mozzarella cheese. Continue to layer until the dish is filled to the top.

6. Bake in oven at 375 degrees until cheese is melted and slight brown on top.

7. Enjoy!

Christmas Coconut Supreme Cake

You know me, the queen of easy recipes. The Cranberry Sierra Mist has made its grand entrance back into stores for the Holiday season. This is one drink that I so love and so excited every time it makes its way back onto grocery store shelves.

Since it was so cold this weekend, I thought I would do a little combination from a cake mix I had in the pantry and the Cranberry Sierra Mist. The final product equals a delicious Christmas Coconut Supreme Cake.

How do you make this holiday treat?

You will need:

1 box of Coconut Supreme
12 ounces of Diet Cranberry Sierra Mist
1 container of fat free whip cream

Step 1:

Pour the cake mix into a mixing bowl

Measure 12 ounces of Cranberry Sierra Mist

Pour the soda into the mixing bowl

Stir well

Pour into a cake pan

Bake according to directions on back of cake mix

Spread the whip cream all over the cake

The cake really is that easy and oh so delicious. According to Weight Watchers new Points Plus program, this cake is 5 points per serving. That is really not that bad for a dessert ;)
