Weight Watchers

You Have to FlatOut Try These Sandwiches!

I started the New Year with a lot less baggage around the waist. It is my goal to keep that certain baggage away forever. You can get in a rut with menu planning but you can change that really fast with a little experimenting in the kitchen.

Most of you have probably heard of Hungry Girl right? I have been a fan of her recipes since I first started my Weight Watchers journey back in 2008. She introduces different ways so you can still have your favorite foods only with substitutions. The best part is the substitutions taste great. Her new line of FlatOut Foldit breads rank right up there with her other products. FlatOut GREAT!

Walgreens and Hungry Girl have teamed up to form a great partnership to distribute these breads in Walgreen stores all across the Country.

The bread is only 100 calories and is so versatile. You can create your favorite panini sandwich, cold-cut sandwich or even individual pizzas. The bread comes in three different choices: classic white, whole wheat and rosemary/olive oil.

I chose the classic white since I was creating dinner sandwiches for my family.

New Laughing Cow Cream Cheese – So Delicious!

Have you heard the news? Laughing Cow has come out with new flavors – Smooth Sensations Cream Cheese Spread. I was so excited to finally find them on our grocer’s shelf.

We have been huge fans of the Laughing Cow cheese wedges for a long time so it was very exciting to see them come out with a strawberries & cream and cinnamon cream cheese spread.

Each wedge is only 1 point on Weight Watchers. Huge score! For the past two mornings, I have been spreading one wedge on two Nutra Grain waffles. Total point value for all = 6 points. I’m so in love. My precious daughter M is a huge fan too.

Thank you Laughing Cow. This will be served a lot in our house. You can pair with english muffins, graham crackers, and the list could go on. Go enjoy a great treat 🙂

Weight Watchers Chicken Cups – So Delicious!

As many know me, I am queen of quick, easy and healthy meals. Thanks to my great friend Cindy over at Cin’s Out Numbered and Loving it, Chicken Cups makes a regular stop on our dinner table. I actually posted a picture on Facebook tonight and many commented requesting the recipe. I thought I had shared this recipe here with my readers, but after researching old posts, there was no trace of the recipe here. I am so sorry for holding out on you. Believe me, you are so going to enjoy this recipe and the entire family will as well.

Ingredients:

1 can Buttermilk Biscuits (10 biscuits)
1 cooked chicken breast, cut into small pieces
1 can Healthy Request Cream of Chicken Soup or Cream of Mushroom Soup (we prefer the mushroom soup)
2/3 c. Fat Free Shredded Cheddar Cheese

Preheat oven to 400 degrees.

Directions:

1. Mix all the ingredients in a bowl.

2. Place each biscuit into a muffin pan.

3. Press the biscuits into the muffin pan holes to form cups.

4. Spoon mixture evenly into cups.

Bake for 12-15 minutes or until golden brown.

From my notes, 2 chicken cups = 5 points. 3 chicken cups = 7 points. Enjoy!

After doing some searching, I kept seeing weight watchers friendly potato soup recipes all over. Most used refrigerated potatoes though, and I like using my own potatoes. So without further ado, enjoy an easy and healthy recipe of Potato Soup!

Delicious Pumpkin Shake Recipe – 4 Points Weight Watchers

Pumpkin is always on my mind here lately. My step-daughter and I were chatting last night that a Pumpkin Shake would be so delicious right now. You never can usually find a low-fat version though, so I told her I would come up with my own recipe.

After dinner tonight, I dived right into concocting a recipe for a weight watchers friendly shake. Here are the ingredients I used:

1/2 cup fat free Breyers Vanilla ice cream
3 tsp. of canned pumpkin
1/2 cup of skim milk
Nutmeg
Cinnamon
Fat Free Whip Cream

I mixed the first five ingredients together in a blender. Pour into a cup. Top with fat free whip cream along with a sprinkle of cinnamon on top.

RESULT:

4 point Weight Watcher Pumpkin Shake (so delicious)!

Enjoy!
