Stress Can Add Weight

Unfortunately, when there is stress in your life and you don’t make the best food choices then that food can add the numbers to your waistline unfortunately. After going through an awesome weight loss journey, my world was turned upside town when my beloved grandmother passed away. That was my best friend. I miss her so much and just would eat this, or that and then the weight began to creep back on. Not a lot of it came back, but 15 pounds did over the course of the last year. I got to thinking, Grandma disliked so much when I was fat, I need to suck it up and make her proud of me.

So, this year, I have been doing just that. I am back to religiously counting my weight watcher points. I have cut out a lot of sugar and soft drinks. Even cut back on the amount of coffee I was drinking. Water is my choice of drink these days.

I am back on track and getting very close to where I was with my weight loss journey. Here is where I left off:

I am not quite there yet, but it is a huge step in the right direction. I am just thankful that I realized what was happening and made the change before it is too late. Diets do not work, it is the lifestyle change that works. Walking is definitely what helps as well as also Just Dance on the Wii – just saying!

I am going to add more recipes here as well that I have been cooking up over the last few weeks that are low in points. I will do a weekly update with my weight loss and tips that are helping me along the way. Summer will be here before we know it and we all know what that means – Bathing Suit time!

Snacking Can Be Healthy Too

I get lots of questions and emails on how I create healthy snacks for my family. Most of you all know, that I started a healthy weight loss journey this time last year. It’s still going strong and I thought I would share with you some of my ideas that I do for my family.

At the beginning of each week, I go to the grocery store or farmers market. It depends on our schedule of the weekend to which location that I go to pick up our weekly produce. I select the veggies and fruits that I know we all will eat. I come home then and begin the big divide. I pack the girls lunch everyday so I use several small containers. Each container will get a serving size of either fruits or veggies. All these containers reside on our bottom shelf all week. I then will fix up four big containers of the fruits and veggies. The big containers are used for snacks here at home and the small serving size containers are used for packed lunches every day.

It does take time on Sunday’s to do this every week, but it is worth it during the week when the girls and I can just go to the fridge open and take out a quick and easy snack. Now, we also have a wooden cabinet that sits in our dining room. This is our dry food cabinet. I will fill that cabinet up with wheat thins, veggie crackers, baked lays, fruit snacks, peanuts, graham crackers and granola bars. The girls are allowed to pick one of these snacks when they get home from school and one before they go to bed. Now notice, they can go into the fridge unlimited to get the fruits and veggies, but we do limit them on the dry snacks. For the dry snacks, they are allowed to fill a bowl half way.

That is the big thing, it is all about portion control and teaching the kids early on. Now, listen up! Do you notice what types of snacks I have? I do not have little debbie cakes, cookies, and etc sitting around. All that carb, and high fat stuff will do is cause your family to be unhealthy, so why even buy it? Do not bring it in the house and you will not be tempted to eat it! It is simple as that. Make sure you have the healthy snacks and just keep doing this process each week. You will feel better about yourself (not sluggish) and you will lose weight in the process.

Weight Watchers Chicken Pot Pie

Ingredients:

1 cup reduced fat Bisquick
1/2 cup skim milk
1/4 cup egg substitute
2 boxes green giant frozen boxed mixed veggies
2 cups boneless chicken (cut in small bites)
2 cans Healthy Request Cream of Chicken
Cooking spray

Steps:

Preheat oven to 400 degrees F

Spray an 13 x 8 inch baking dish with Pam

Put the vegetables, chicken and soup into a mixing bowl

Mix Well

Pour into baking dish

In another bowl, mix Bisquick, milk and egg

Pour the dough mix over the top of chicken mixture in the baking dish

Bake for about 30 minutes or until crust is golden and then Enjoy. Only 4 points per serving. Remember your fist equals a serving.

Weight Watchers Meal Baked Chicken Tenders

I am so trying to find new ideas for meals so I took a leap and used a couple ingredients I had here in the pantry. The ingredients included:

1. Tiger Sauce (I found this at our local grocery store)
2. McCormick Salt Free Garlic & Herb

I took a pack of fresh chicken tenders made from chicken breast. Poured the tiger sauce all over the chicken tenders, then topped that with the Salt Free Garlic & Herb all over.

4 chicken tenders = 3 points

I added the following sides:

Fresh cut cucumbers = 0 points
Bush Baked Beans = 2 points
Ocean Spray Cranberry Sauce = 2 points

Total Points for Dinner Meal = 7 Points

5 Day Dinner Menu Week 1

I have received several requests through email on what meals I eat throughout the week. So, each weekend I always sit down and make out my grocery list/meal plan for the week. I thought what better way to tell everyone than to share it with you all; my readers each week. I hope this will help in some ways to you all :) . I will be adding the total weight watcher points for each meal as well!

Monday:

Spaghetti noodles with Ragu Spaghetti Sauce and 93/7 Ground Turkey Meat
Salad (Lettuce, Tomatoes, Green Peppers and Cucumbers) & Fat Free Dressing

Total Points: 10

Tuesday:

BBQ Pork Loin
Green  Beans
Yellow Rice
Applesauce

Total Points: 8

Wednesday:

Turkey (Fat Free) Hotdog with White Wheat Bun, Mustard, Chili
French Fries
Fresh Blueberries

Total Points: 7 – Each additional Hotdog is 2 points

Thursday:

Pork Roast with basil, oregano, minced onion, worcestershire sauce and 12 oz of diet coke. (I pour all these ingredients on the roast and cook in crockpot for 4 hours on high or 8 hours on low)
Baked Potato
Fresh Cucumbers

Total Points: 7

Friday:

Chicken Breast Boneless with Lemon Juice
Corn on  Cob
Baked Beans
Fresh Strawberries

Total Points: 8

Jen Saying Good Bye to 50 Pounds

Farewell goodbye… never come back again. You hear that ;) . HA! No, I’m not saying that to any specific person. I am saying that to the fat that has loved visiting me for the last almost 5 years!!

Weight Watchers Milestone 40 Pounds Gone

First off… I am so happy to be back to blogging. I believe we finally have removed that pesky stomach bug once and for all (don’t we hope!). I achieved a HUGE milestone while I was away battening down the hatches from that pesky stomach bug.

I am finally 40+ pounds GONE! I try to take pictures along the way so I can look back, because since I see myself everyday, it is hard to see the progress I have made. Looking back over these three pictures, I can so tell the hard work that I have accomplished. I have been trying to loose this weight for such a long time, and you just don’t understand the joy it has brought me to finally say good by forever to that spare tire I was carrying around  my waist. I am having so much fun with all the new healthy recipes I am cooking for my family. I catch myself smiling more when I look at myself in the mirror. It’s just an overall good feeling. I still have a bit more to go till my final goal, but just take a moment and look at my journey below of pictures of the last few months. Can you see my progress? :)

Weight Watchers Easy Lasagna

This is an incredible easy recipe and it tastes really well. All my family even the girls really enjoyed it :)

1 Serving = 8 points. Add a salad with fat free dressing and you have a complete dinner meal for 9 points.

I Met My First Weightloss Goal See Pictures

As most of you know, I have been on a weight loss journey for a few months. Being on this journey has given me so much more self confidence and has brought out a whole new me. It is so wonderful to have support from family and friends too. Just hearing encouraging words and congratulation words brings a big smile to my face.

Last night at Weight Watchers, I was recognized for meeting my first goal that was set for me when I first started. I of course was grinning ear to ear when I was gave my gold keychain. This journey has been a wild one, but nothing I wouldn’t do over again. I got to publicly thank in the meeting last night the person that has helped me through all the good times and bad times on this weight loss. She was rewarded with a bravo star for this :) . Love ya girl! Just like the leader said last night, it helps so much for having someone stick with you and let you know they are there for you. It helps make the weight loss so much easier.

I am very happy to also announce that I am partnering with NewBaby.com and Vlogging my weight loss success with them to help other moms with this great lifestyle change. I will also be doing reviews with them as well. So stay tuned to that.

I will post my first video with them at the bottom of the post. Now, I want to show you right now two pictures that will portray my weight loss of 31 pounds so far! The first is a picture of me at my highest weight last summer, right when I moved to NC from Florida. The second picture was taken today to show off my progress.

It’s such a great feeling to share this! I do have to share and say, the way we eat has changed so much. I do way more cooking now and love to change up the recipes to make them my own. Each week brings something new and I haven’t had a meal yet the family does not like. The best part… they are all healthy but still ohhhhh soooo delicious. I’ll be sharing some of the recipes with you so you can try them out. Also, they are very easy recipes because YES, I do know we are all busy and don’t have time to spend two hours in the kitchen ;) .
